Semolina (Sooji) is a coarse, High-gluten flour which is made from hard durum wheat. Since semolina is high in gluten it is particularly suited to make pasta. Aakash Foods primarily import durum wheat from Madhya Pradesh. Once the wheat reaches our mills it is de-husked and prepared to be refined.
Semolina has three larger varieties based on the size of the granule: course, medium and fine. Sona Aakash Semolina comes in course and medium granule sizes. Before the wheat is refined into flour it is lightly roasted which gives sooji its faintly brown colour.
Apart from making pasta you can also make bread, cake, pizza, couscous, and porridge. There are multiple Indian dishes you can make with this amazing flour. Most importantly, with Sona Aakash Semolina you get the complete benefits of semolina as there are no added chemicals.
Semolina provides all the health benefits of wheat and more. It has twice the quantity of fibre and significantly more protein in comparison to all-purpose flour. Adding semolina to your diet introduces some essential minerals, such as: potassium, iron, zinc, and important complex B-Vitamins. Wheat is quite rich in fibre, however when refined into a coarse flour the fibre are relatively intact thus more effective. When semolina is processed the essential nutrients are stripped, thus we enrich the flour with balanced essential nutrients.
